Forty-eight-hour cold ferment, stone-ground Sierra wheat, and a starter that has lived in our kitchen since day one.

Our Story

Built slowly, the way good things should be

Red Paws Vineyard began as a simple conviction: that the best wine and the best bread share the same ingredients—time, patience, and respect for the land. We bought the property in Grass Valley with overgrown rows and a tired oven, and we started planting and mixing.

Today our vines stretch across the foothills and our ovens fire every morning before dawn. We work with local grain millers, wild yeast cultures, and the kind of slow fermentation that cannot be rushed. Everything we make is small-batch, hand-labeled, and made to be shared at a table.
